A little history. Back when the food industry realized that processed vegetable fats and artificial preservatives could increase the shelf life of processed foods, the supermarket chains were born, and the food manufacturers raked in tbe money. The result was an epidemic of heart disease, obesity and cancer. In order to deflect blame from their unhealthy products., they joined forces with government health authorities, the FDA and the big Pharma to convince us that saturated fats from meat, dairy and eggs were to blame. and the low fat diet was born. They also lied that Vitamin A could be obtained from colored fruits and vegetables (beta carotene), rather than fish, meat, dairy and eggs. This didn't stop the lies and deception, and the health crisis continues unabated.

Exactly! And now here some of us are, having to strap a CPAP onto our faces just to get a little sleep. It’s all connected.

This was super interesting to read! I am personally more of a plant girl, with some chicken, fish (and a lil bacon here and there - extra crispy please). My body does not want red meat. Just doesn't. I do pay attention to protein and try to get my protein from other sources. You are so right on your point that everyone is different - what might work for one, may not work for another. Seriously, great read!

I'm glad you (ever so slightly) touched on plant-based for those of us who would probably throw up at the thought of eating a ground beef patty lol. I don't eat meat and I do find that getting enough protein is a challenge. Also, veggies are naturally high in carbs even if they are good carbs.

I'm fascinated by the topic of food assisting/curing other ailments that humans suffer from. There's WAY too much proof out there to deny that food is probably the biggest villain in our lives. Just look at Blue Zone studies. It's all so fascinating.

Thanks for sharing your friend's experiences Tim!

I will write about plant-based eventually lol.

I was totally "plant-based" for two years, but I kinda bought into the processed food idea that something out of a package from a factory could have anything to do with plants. Like Beyond Burger, for instance.

Then there was a downward spiral, where I got hungrier and hungrier as I became more carb-focused than ever. It's hard to avoid when you replace meat because the go-to becomes carbs. Like noodles, rice, beans.

I ran into some problems where I became intolerant of several legumes and other plant-type things, I couldn't eat them anymore because my stomach was revolting (the stuff I was leaving in the bathroom and farting out everywhere was revolting too). And that's where things really went sideways. I replaced the legumes with rice, bread, and potatoes.

I eventually had to give up the plant-based stuff because it wasn't working, and went hog-wild. That ended with binge eating, and I blame the "plant-based" deception for part of it. If it was actually based on plants, I would have been a lot better off.

Yeah I have a serious problem with the ingredient lists on anything that markets as "plant based" in stores. It's all so processed!!! I don't eat any of that because I can't afford it lol. But I do eat a ton of veggies. Like today, a giant pot of coconut curry veggie soup that will last for a week!

It is pretty hard to come up with variety in the veggie world if you're trying to avoid carbs. I don't avoid carbs lol.

Great story. I’m thrilled for Josh. People need to know it’s not about going on a diet. It’s a lifestyle.

Yes! That’s exactly it. He switched his lifestyle. The tool he used was an elimination diet, but the real change was a focus on eating healthy and taking care of himself.

I did an elimination diet years ago. It’s amazing what one can discover.

Good for him for making those changes. It’s not easy that’s for sure. And when I was 300 lbs I also had sleep apnea and it’s scary as hell. Never again.

I know exactly what you mean. My wife used to shake me awake because she was worried I was gonna die when I stopped breathing.

Yikes it’s all scary for you and her. After I lost that massive weight in 2018 it disappeared. And when I regained a lot of it in 2020 luckily it never came back but now I can happily say it will never happen since I’m on a much better path.

I lost weight and quit smoking and that took care of it. But I think for me it had a lot to do with a diagnosed gluten intolerance. After the doctor told me to cut out wheat, the sleep apnea and the heartburn both went away. But guess what. If I eat like crap for more than a week, that heartburn comes back, and maybe the other issues would too if I ate bread every day

Oh yeah heartburn is another I’ve battled but I rarely have it now. Yeah intolerance to gluten can wreak havoc on you. Quitting smoking and losing weight is very impressive and not easy.

Thanks for your feedback! I’m definitely not suggesting that we all follow in Josh’s footsteps. This was an elimination diet that he followed for a period of time which allowed his body to heal, and I think it works for everyone who gives it a go. But it isn’t for everyone.

Thanks Tim, well done Josh!
